I sometimes share business tools that I think could be used in the classroom, and tyrus.design is one of the most indepth business sites I’ve stumbled on that could be used for classrooms looking at project based learning. tyrus.design is a step by step book for illustrators working with clients, but the information basically works with any project.

The site has tons of examples and walkthroughs on dealing with clients, analyzing their problems, and working through a project that helps the client. If you are doing project based learning, the site can be used as an introduction, although you will need to modify the content for lower grade levels.
